安全性
與L-抗壞血酸相同。大鼠經(jīng)口LD50大于5g/kg。FAO/WHO(1994)ADI為0～15mg/kg [1] 。
應(yīng)用
與L-抗壞血酸相同。在不適宜添加酸性物質(zhì)的食品中可使用本品，例如牛乳等制品。另外，對(duì)予肉制品還可以作為發(fā)色助劑，同時(shí)可以保持肉的風(fēng)味、增加肉制品的彈性。據(jù)一些研究證明，抗壞血酸、抗壞血酸鈉對(duì)阻止亞硝酸鹽在肉制品中產(chǎn)生有致癌作用的二甲基亞硝胺具有很大意義。其添加量為0.5%左右 [1] 。
